The soils are characterized by calcareous marl and loess loam. The Pinot Blanc grapes were hand-harvested in several stages after ripening. To ensure optimal extraction of aromatic compounds, the berries were lightly crushed and left to macerate in their own juice for 18 hours. The juice then fermented for approximately 12 weeks with the grapes\u0026#39; own yeasts, converting the sugar into alcohol. The Dreissigacker Pinot Blanc has ripe apple fruit with a hint of melon.
