This bottling comes in a magnum (1.5 l) and is suitable for larger dinner parties.\u003c\/p\u003e\u003cp\u003eThe grapes come from various fully south-facing plots of the Cornas appellation and are harvested by hand according to terroir. After three days of cold maceration, the wine ferments traditionally in open concrete tanks; the maceration time can last up to 20 days. It then matures for 12 to 14 months in oak wood; regular racking rounds off the tannins.\u003c\/p\u003e\u003cp\u003eIn the glass, cassis and dark fruit appear; with a little air, pepper and licorice are added. The wine is dry and has structure and depth. We recommend it at \u003cstrong\u003e16 to 18 °C\u003c\/strong\u003e with braised lamb, grilled entrecôte, or a mature hard cheese.
