The grapes for the M de Minuty rosé cuvée are harvested at optimal ripeness, destemmed in the winery, gently crushed, and briefly macerated (three to four hours) before pressing to extract the delicate pink color and fragrant varietal aromas from the skins. After pressing, the must rests overnight at a cool 15°C, allowing any sediment to settle and the must to be gently clarified. The following day, fermentation begins at controlled temperatures in stainless steel tanks to preserve maximum fruity freshness and lively acidity in the wine.
