Sorting takes place during the initial inspection in the cellar. After heating the harvested grapes with whole berries to 80°C (skin), they are cooled to 20°C. Classic maceration for the Syrah and Mourvèdre takes place in covered wooden vats, and for the other varieties in concrete vats. The blending of the different grape varieties occurs after malolactic fermentation. Aging lasts one year in oak barrels and at least one year in the bottle.
