The distillery works with agaves that are cooked in an oven using traditional methods before the mash is fermented and double-distilled. The subsequent filtration removes the oak color but leaves the aromas gained from barrel aging largely intact.\u003c\/p\u003e\u003cp\u003eIn the glass, vanilla and soft caramel notes from the oak aging appear, underscored by cooked agave, a hint of white pepper, and a slightly floral line.
