Nik Weis, who runs the estate in its third generation, works with old vines on steep slopes that require hand-harvesting only. The Bockstein is one of his flagship wines – accordingly, the standards for vinification and aging are very high.\u003c\/p\u003e\u003cp\u003e In the glass: Star anise and lavender on the nose, underpinned by fig, pear, and mandarin. The acidity is precise and densely woven, without being harsh – a sign of slow aging on slate. The finish is salty and mineral, long, with a slightly spicy herbal note.\u003c\/p\u003e\u003cp\u003e This wine needs time. Drinking window: 2026–2038. If opening now, decant it at least two hours beforehand.
