Fermentation took place with vineyard-native, natural yeasts in a combination of wooden barrels, concrete, and stainless steel tanks. Afterward, the wine aged for 36 months in large Slavonian oak barrels.\u003c\/p\u003e\u003cp\u003eIn the nose, ripe cherries, forest berries, and violets appear, plus Mediterranean herbs and fine spices. On the palate, it appears deep and tightly built, with fine-grained tannins, fresh acidity, and a long finish. Recommendation: decant the wine before serving and drink it at \u003cstrong\u003e16–18 °C\u003c\/strong\u003e. It pairs well with braised beef, game ragout, or aged Pecorino.
