Aging in barriques is not an end in itself, but rather a framework: structure for a wine that would otherwise be too extreme.\u003c\/p\u003e\u003cp\u003e In the glass: ripe citrus fruit, white peach, maquis herbs – myrtle, thyme, a hint of smoke from oak aging. The granite makes itself known as a salty minerality on the finish; the acidity carries the wine without harshness.
