The old Benedictine winery ferments spontaneously in small cuves, after which the wine matures in French and estate-owned barriques and is bottled unfiltered.\u003c\/p\u003e\u003cp\u003eIn the glass, it appears deep ruby red. On the nose, sour cherry, blackberry, violets, and fine smoke. On the palate, there is silky-woven tannin, carried by cool minerality and precise tension; 13% vol. keeps it in balance. The finish is long and salty.\u003c\/p\u003e\u003cp\u003eServe it at \u003cstrong\u003e16–18 °C\u003c\/strong\u003e, preferably after brief decanting.
