They jotted down a six-part business plan on the back of a napkin: Individuality, Integrity, Quality, Purity, Elegance, and Power. The first Mitolo wine, the 2000 GAM Shiraz, was named after Frank\u0026#39;s children, Gemma, Alex, and Marco. Since then, Mitolo has added 10 more wines to the range, each with its own personality and story. The winery works closely with the Loprestis. The Loprestis, also Italian immigrants and old friends of the Mitolos, have an affinity for their land and produce fruit of the highest quality. The fruit is the essence of Mitolo, with a depth of flavor from the heavy clay soils, yet fresh thanks to the gentle afternoon sea breeze. In the winery, Ben takes a hands-off approach, cold fermenting to preserve purity and using a variety of coopers to create complexity while respecting and enhancing the fruit. Mitolo\u0026#39;s Italian heritage is always preserved through the use of Italian grape varieties and techniques. Business meetings still take place on Sunday afternoons over traditional Italian food and, of course, Mitolo wine with friends, old and new.
